Fried Zucchini Cakes
Tastes much like German Potato Cakes!
What you'll need:

4.5 cups of shredded Zucchini

1 onion

1 bell pepper + 1 red bell for color

one egg

3/4 cup flour
(I use whole wheat but
white works fine)
1/2 tsp ground black pepper
1tsp salt
(I use sea salt)
A food processor can be used for the
zucchini but the onions and peppers
should be chopped small and not
ground with the processor.

It takes something away from the
flavor  of the onions and peppers by
using the processor.
Add all ingredients together in a large
mixing bowl.
Mix well.  It should look something like
this.
Cover the bottom a skillet with cooking
oil (I use virgin sunflower or virgin olive
oil).  Heat pan of oil.

Drop batter by spoon full into the hot
oil (not smoking or boiling).  Pan fry
slowly on one side then flip the cakes.

Cook till onions and peppers are
tender and the cakes are golden
brown and crisp.

Makes 10-12 cakes

ENJOY!!
You can top them with catchup,  pancake syrup or nothing at all!
